Roles Currently Available

We are looking for full and part time staff to work in our new Thistledown Café near Nympsfield, Stroud. We have positions available in our open kitchen helping with pizza nights, BBQ lunches and Middle Eastern mezzes dishes, as well as front of house roles. We’re very happy for the same person to take on roles in both the kitchen and front of house. We are looking for staff with experience in hospitality and catering. Pizza Chef

The pizza chef will be responsible for the prep for and delivery of two pizza nights per week. The prep day will be on a Thursday (ideally after lunch so that the kitchen is not in use for service) and the service days will be Friday and Saturday evening. The pizza chef will be in charge of a kitchen team of 3 or 4 during service and will work alone on the prep day. On average in 2017 we were delivering 130 pizzas a night. Our pizzas are cooked in around 2mins in our wood-fired clay oven. The pizzas have sourdough bases and are made in the Neapolitan / New York style with thin bases, well-developed crust and not too many toppings.

Responsibilities include:

  • Help to develop pizza menu, with an emphasis on seasonal, local and foraged produce
  • Ensuring high quality of pizzas, developing on our good reputation from 2017
  • Mixing sourdough and balling up
  • Ensuring output of pizzas is as prompt as possible
  • Working to ensure customer requirements (dietary and other) are met where possible
  • Adhering to best practice kitchen hygiene
  • Ensuring kitchen is cleaned down to a high standard after service
  • Directing and helping staff to complete kitchen and cleaning tasks
  • Ensuring wood fired clay oven is at temperature
  • Ensuring adequate prepared ingredients for service and backroom stock

The prep day in 2017 was between 3hrs and 7hrs. 4hrs should be ample most weeks. On Fridays and Saturdays balling up must be completed at least an hour before service. Service starts at 5pm (occasionally a little before if we have a large group) and last orders are taken around 8pm. Service should be over by 9pm and clean down completed by 10:30pm / 11pm (occasionally later). The recommended service day is therefore midday / 1pm to 11pm.

Applicant must have:

  • Enthusiasm for high quality food and ingredients
  • Be reliable, organised and committed
  • Experience of catering and ability to cope with busy services
  • Preferably have experience of and passion for sourdough baking / wood-fired ovens
  • Preferably have existing food hygiene certification

For 2.5 shifts a week the pay is £1100 / month plus tips. The pizza nights start in April and run until the end of Sep or the end of Oct (we will take a decision together in the summer). There will regularly be the option of daytime shifts in the café (paid overtime).

 

Daytime Café Chef

We are looking for a third chef to work alongside our two current chefs (plus kitchen assistants) at our award-winning campsite and café. The café is relatively new but is steadily building a reputation for delicious, wholesome food made from scratch. We have a wood-fired clay oven and charcoal BBQ so an interest in cooking with fire would be beneficial. We produce a lot of our own foods in the kitchen (e.g. yoghurt, labneh, paneer, doughs, preserved fruits, chutneys, pickles and jams and so on) so the applicant must have an interest in cooking from scratch and kitchen processes.

The applicant must be able to work well as a team and instruct other members of the kitchen. We have a collaborative approach in the café with no ‘head chef’, so the three chefs will work together to develop the menu, run service, train staff and maintain stock levels. Pay is £9 – £10ph (depending on experience) but we plan to salary kitchen roles soon. We are open Weds to Sun and we’re looking for 3 to 5 days a week (depending on applicant). Weekends would be required but we can be a little flexible with the other days. There will occasionally be evening services (pop-up events or help with pizza nights).

  • Ensuring adequate prepared ingredients for service and backroom stock

Café Assistant

Hours very flexible (Weds – Sun shifts available, 7 days a week in holidays) but applicant must be able to work weekends. Minimum of 8hrs if applicant only wants one shift. Full time positions (40hrs) available. Role will involve taking orders at table and using our till, taking table bookings, serving drinks and food and so on. Applicant must be minimum 18yrs and have café or restaurant experience. £7 – £8ph depending on age and experience (plus tips).

Applicant must:

  • Have experience working in a café, table service and / or coffee training
  • Happy working as part of a team
  • Be reliable and committed
  • Have a friendly manner and be well presented
  • Interest in locally sourced food and well made coffee preferable
